Rhubarb custard cake
Mix 1 package of yellow cake mix as directed by the package. Grease a 13 x 9 with cooking spray. Pour cake mix into the pan. Add 4 cups of chopped rhubarb. Sprinke 1 cup of sugar on top of the rhubarb and pour 1 pint of whipping cream over the top. Bake at 350 F until firm and browned on top.
Sticky Chicken Wings
This was from Martha Stewarts Everyday Foods but I doubled the sauce.
2 lbs of chicken wings ( cut in half at joint and wing tips removed)
1 1/2 cups packed light brown sugar
1/2 cup fish sauce
1/2 cup lemon juice
4 Tablespoons soy sauce
2 inch piece of ginger, smashed and peeled
2 jalapeno peppers, seeds removed and sliced the long way
Preheat oven to 300. In a bowl, whisk together brown sugar, fish sauce, lemon juice, and soy sauce until sugar dissolves. Add ginger and peppers, mix.
Place chicken wings in a 13 x 9 baking dish. I use a tin foil dish, because I basically ruined a dish the first time. Arrange chicken in a single layer. Pour the juice mixture over the top and toss to cover.
Bake for 1 hour, then increase temp to 450 and bake another 30-45 minutes. Turn the wings occasionally. Bake to your liking. I like mine dark brown and gooey.
